Classic Loire Sauvignon Blanc — grapefruit, flint, and green herb. A natural bridge between the branzino's coconut sauce and the chicken's yogurt and spice.

A rare Piedmontese red — light-bodied, peppery, and wildly fragrant. Rose petal and white pepper meet the tomato and heat of the rigatoni without fighting it.

Assyrtiko, Dourakis 2024

Santorini's darling grape, grown here on clay and limestone by a family winery founded in 1988. Softer and fruitier than the island original but still bright, saline, and mineral — lemon, lime, white peach, tropical fruit.

Hilberg-Pasquero "Vareij" 2021

A dry red co-ferment of Brachetto and Barbera from a small family estate near Alba — Brachetto is usually sweet and fizzy; here it's fully still, with Barbera adding acidity and structure. Rose, violet, strawberry, black pepper, and macerated raspberry.

Casa do Capitão-mor Alvarinho 2023

From Quinta de Paços, a 13th-century, 16-generation estate. Grown on granite — more structure than typical light Vinho Verde. White peach, lemon zest, saline minerality, high acidity.

Pouilly Fumé, Millet

Sancerre's lesser-known twin, made by husband-wife team Betty and Franck Millet on clay, limestone, and flint. Smoke, green grass, tart white fruit, nectarine.

Antxiola Getariako Txakolina

A rosé Txakoli that nearly went extinct, now made by the Errasti family (Bodegas Zudugarai) in seaside Getaria. Slight effervescence, saline, raspberry, lemon zest.

Etna Rosso, Benanti

Founded in 1988 by Giuseppe "Pippo" Benanti, bringing Burgundian influence to Etna. Nerello Mascalese and Nerello Cappuccio. Dried red cherries, smoky, savory, good acidity.

Joseph Pascal Bourgogne Pinot Noir

A four-generation Puligny-Montrachet estate (renamed Joseph Pascal in 2021) with ties to Domaine Leflaive. Minimal oak (20% new) lets the fruit lead. Sweet cherries, raspberry, spices, subtle earthiness.

Vouvray Brut, Pinon

Champagne-method sparkling Chenin Blanc from father-son estate François et Julien Pinon, grown on clay and flint. White flowers, green apple, citrus, brioche, almond.
